Sweet Beet Salad

Who doesn’t like orange soda? Ok besides my mother, and maybe my grandmother everyone else loves it. When I was put up to the challenge to create a recipe using it, immediately I grabbed the beets. The orangey flavors mixed with the delicious beets make your pallet crave more. I know it’s not your typical, but neither am I.


Ingredients:
1 8oz bag romaine lettuce – pieces  
2 Gefen precooked beets -thinly sliced
1 orange - supremed – check out my blog to see how to do this 
1 small red onion – thinly sliced
¼ cup toasted slivered almonds

Dressing:
½ cup orange soda
¼ canola oil
¼ cup orange juice
1Tablespoon white vinegar
2 teaspoons sugar
1 teaspoon Kosher salt
1 teaspoon black pepper
1 teaspoon orange zest – optional

Directions:
1) In a small container combine all the dressing ingredients. Shake well to combine and set aside.
2) Assemble salad. Place lettuce on the bottom of a medium size bowl. Mix in half of the dressing and toss together, and then add the beets, oranges, and red onion. Sprinkle the top with the slivered almonds. Serve with the remaining dressing on the side or place in fridge for later use.
