Roasted Vegetable Mix

Who doesn’t like vegetables? I mean I would much rather have ice cream but that will show on my waistline. So, if I am going to eat vegetables I like when they are really good. This combination has an amazing taste and even a better aroma. I’ll be adding this to my collection of favorites. Oh, I forgot all my recipes are my favorite!

1 24oz bag frozen cubed butternut squash
1 large zucchini – diced small
1 16oz can chickpeas – drained well
1 teaspoon chili powder
1 teaspoon graham masala *
1 teaspoon Kosher salt
1 teaspoon garlic powder
2 Tablespoons canola oil

1) Preheat oven to 350˚ F. Line metal baking sheet with parchment paper.
2) In a large bowl add all the vegetable, spices, and oil and toss well.
3) Spread on prepared baking sheet and place in oven on center rack. Bake uncovered for 45 minutes, Enjoy.

Chefs notes:
* Graham masala is an Indian spice blend. It is available with a hechsher in most local grocery stores and online @ Amazon. The brand I used is Pereg.

Store in fridge for up till 1 week. Serve leftovers at room temperature.
