Pesto Grilled Chicken

The mother of my really good friends is like the pesto queen. She was the first person to  introduce me to pesto. I remember I was once going upstate to visit her sons (yes she has quads) and I asked her what I can bring; her answer was “bring some pesto”. So when I was in the kitchen the other day developing new chicken marinades I knew I had to make something with basil/pesto. Mrs. _____________ this one is for you.


6 cubes Gefen frozen basil 
4 cubes Gefen frozen garlic 
¼ cup oil 
½ cup mayonnaise 
1 teaspoon black pepper 
1 teaspoon Kosher salt
1 Tablespoon honey 

1lb chicken cutlets – you can use more, marinade goes very far. 

1) In a large Ziploc bag combine all the ingredients and marinate in fridge overnight. Remove chicken from marinade before grilling. Enjoy
