Gluten Free Chocolate Chip Cookies
I walked into my kitchen the night I made these cookies and found my brother munching on them. I turned to him and asked, are the good? It’s not until I told him that they were gluten free, did he realize! Using Gefens almond flour this recipe has that soft, chewy feel in every bite!! You don’t have to be gluten free to make these! So what are you waiting for.... let’s start baking!
1 stick margarine – room temperature
¾ cup light brown sugar
2 large eggs
1 Tablespoon vanilla extract
½ teaspoon table salt
1 ½ teaspoon baking powder
3 cups Gefen Almond Flour – 100% Gluten Free
1 cup semi – sweet chocolate chips
1) Preheat oven to 350° Fahrenheit. Line 2 metal cookie sheets with parchment paper.
2) In a electric mixer beat the margarine, and brown sugar until well combined. Add the remaining ingredients besides the chocolate chips. Using the peddle attachment, mix on low for 1 minute then on high for 1 – 2 minutes or until all the ingredients are combined. Add the chocolate chips and beat for 30 seconds.
3) Using your hands form the batter into 24 balls (golf size). Place on the lined cookie sheets, leaving space between each one.
4) Place one tray at a time into the preheated oven. Bake for 15 – 18 minutes, or until edges are golden brown. Remove from oven and let set for 3 minutes. Transfer cookies to a cooling rack. The cookies will be very soft, but will harden once they are completly cool. Enjoy!!!!!
Tip: Recipes can be doubled, tripled etc.
