Chili Lime Salad

The other day I was in Trader Joes and I came across these chili and lime tortilla chips that I heard about from a famous Instagram influencer. I placed the bag into my cart and headed toward check out…... once that was all done, I went to my car and the first thing I did was open the bag of chips and give them a taste… and the rest is history and here is the salad!


Chili Pickling:
½ cup sugar
2 Tablespoons vinegar of your choose
¼ cup Kosher salt
2 limes/lemons – thinly sliced – with the peels
2 red chilies* – thinly sliced
1 red onion – thinly sliced
¼ olive oil

Directions:
1) In a small bowl mix together the sugar, and vinegar to form a paste. Set aside.
2) In a 1-pound container, layer 2 slices of lime on the bottom of the container. Add some chilies and onion slices. Spoon 1 Tablespoon of the sugar/vinegar mixture on top. Sprinkle 2 teaspoons salt and top with 2 slices of lime. Repeat with remaining chili and onions until the container is full. Add the extra salt and sugar/vinegar mixture on top. Pour in the oil and seal the container. It should be so packed that it should be hard to close. Place in fridge for 24 hours.

Dressing:
½ cup mayonnaise
2 Tablespoon honey
1 Tablespoon white vinegar
1 teaspoon Kosher salt
2 teaspoon lime juice
1 Tablespoon ketchup

Directions:
1) In a 1lb container whisk together all the ingredients. Store in fridge for up until 1 week.

Assemble Salad:
1 24oz back Romaine lettuce – pieces
1 cup chili pickling – recipe above
1 cup Trader Joes chili lime tortilla chips – smashed
Dressing

Directions:
1) In a large bowl mix the lettuce together with the dressing. Add the chili pickling and top with the chips. Enjoy
